Brown Bread Revisited, 27-10-07
Remember this attempt at brown bread after my cooking class?
Well, I got some guidance, and tried again.
Same brown bread recipe, but this time, I pre-heated the oven to 450 on convect bake.
After the first rise, I shaped and let the bread proof a bit more.
As I put the bread into the oven (on the baking stone, with cornmeal to keep it from sticking), I also slipped a metal cake pan full of ice on the rack underneath the baking bread - helps make steam for the first part of the bake.
The results?
Gotta work on the decorative slashes across the top, but getting better.
More again, as I try different things.
